In a world obsessed with instant results, I’ve come to really appreciate the beauty of slow baking—and not just because I physically have to slow down. It’s because time, care, and intention are the secret ingredients that machines and shortcuts can’t replace.

At SANCHA, everything is small-batch, handmade, and often experimental. That means nothing is rushed. And that’s exactly how I like it.

Yeast doesn’t care about your schedule. Dough needs time to rest. Flavours need time to develop. Whether it’s the fermentation of a tangzhong milk bread or the mellowing of a matcha cookie dough overnight, time changes things. It softens them. Deepens them.

Slow baking is a quiet reminder that some things can’t be forced.


Slowness Makes You Pay Attention

When I’m not rushing, I notice everything—the feel of the dough under my fingers, the shift in aroma as butter begins to brown, the tiny puff of steam when mochi is perfectly baked.

That kind of awareness turns baking into more than a recipe—it becomes a relationship between you and the food. You learn its moods, its needs. You respond. It’s a conversation, not a command.


Every Batch Has Its Own Personality

I could make the same recipe three times and each batch will come out slightly different—and that’s okay. It’s part of the charm of baking by hand. I love that there’s room for imperfection, for evolution, for surprise.

That’s why I resist automating too much of SANCHA. I’d rather make ten beautiful things with intention than a hundred rushed ones.
